Chana Masala, also known as Chole Masala, is a popular North Indian dish made with chickpeas in a spicy tomato-based sauce. Ingredients:
- 2 cups of dried chickpeas, soaked overnight or 2 cans of chickpeas, drained and rinsed
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon of fresh ginger, grated
- 1 green chili pepper, finely chopped (optional)
- 2 tablespoons of oil
- 2 teaspoons of cumin seeds
- 1 teaspoon of coriander seeds
- 1 teaspoon of turmeric
- 1 teaspoon of garam masala
- 1 teaspoon of paprika
- 1 teaspoon of salt (or to taste)
- 2 cups of water
- 2 tomatoes, chopped
- 2 tablespoons of fresh cilantro, chopped
Instructions:
- If using dried chickpeas, soak them overnight in plenty of water. Drain and rinse before cooking.
- In a large pot, heat the oil over medium-high heat. Add the cumin and coriander seeds and cook for 1-2 minutes, or until fragrant.
- Add the chopped onion and cook for 5-7 minutes, or until softened and golden brown.
- Add the minced garlic, grated ginger, and chopped chili pepper (if using) and cook for 1-2 minutes, or until fragrant.
- Add the turmeric, garam masala, paprika, and salt and stir to combine.
- Add the chopped tomatoes and cook for 5-7 minutes, or until they have broken down and turned into a sauce.
- Add the soaked (or canned) chickpeas and water to the pot and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 30-40 minutes, or until the chickpeas are tender and the sauce has thickened.
- Taste and adjust the seasoning as needed.
- Serve hot, garnished with chopped cilantro.
Tips:
- You can use canned chickpeas to save time, but if you have the time, soaking and cooking dried chickpeas will give you a creamier and more flavorful result.
- If you prefer a spicier dish, add more chili pepper or a pinch of cayenne pepper.
- Leftovers can be stored in an airtight container in the fridge for up to 3-4 days, or frozen for up to 3 months.
